Pumpkin Ale

Every fall I like to brew a beer inside a pumpkin.  This year it was done just in time for our Halloween party.  The beer ended up with a biscuity flavor and just a little bitter pumpkin.  The spices were very mellow, showing up mostly in the aroma.  I think more crystal malt would be a good thing.  The large pumpkins are a little light on the flavor, so I think I will add pumpkin pie filling to my boil next year.  Or maybe I will add chunks of roasted pumpkin to the fermentation.  Hmmm? 

Brewing Method: Full Grain
Batch Size: 10 US Gallons
90 min mash

Boil Time 60 Minutes
Primary Fermentation: 2 weeks
Fermented in a Pumpkin

Yeast:
Safale 05

Grain Bill:
20 lbs. GW 2 Row
1   lbs. Caramunich 1
1   lbs. Caramunich 2
1   lbs. Carapils

Hop Bill:
Bittering  (60 min in hop sack)
1 oz Tradition 6% Alpha
 
Finishing
1oz Fuggles 4% Alpha  

Spice Bill:
cloves
allspice
nutmeg
cinnamon stix

Peanutbutter Bill:
No PB
